This lot, sourced from the Iris Estate produced by Jamison Savage in collaboration with Savage Coffees and Project Origin, exemplifies the "Reserve" philosophy. The cherries macerate in this unique nitrogen-controlled environment, sealed in tanks and flushed with inert Nitrogen for 4 to 6 days for controlled fermentation.

After maceration, cherries are removed and placed on the upper level of a 3 tiered raised bed system.  Once superficially dried, cherries are dropped to the second level where the are frequently agitated to maintain humidity equilibrium inside the grain.  After approximately 25 days, the dried cherries are removed from the beds, placed into hermetically sealed bags, and stored in bodega for up to 60 days.


Dried cherries are then carefully dry-milled, sorted by size, density, and color, then immediately vacuum packed for export. The result is a cup of exceptional complexity, with notes of violet, blueberry, peach, toffee with champaign after taste underpinned by a creamy body.

Shipping & Delivery

If you order before noon we will dispatch your package the same business day. Located in the Netherlands? You should receive your order within 24-48 hours. Rural and international deliveries typically take a little longer and should be with you in 2-5 days.
