This lot, sourced from El Diviso is a family-owned coffee farm located in the Huila region of Colombia, is managed by Nestor Lasso and his family. The farm is widely recognised for its focus on innovation in specialty coffee, combining traditional coffee-growing knowledge with experimental fermentation and drying techniques. El Diviso works with high-quality microlots and continuously refines its post-harvest processes to create increasingly complex and expressive flavor profiles. Nestled within the mountainous landscapes of Huila and surrounded by rich volcanic soils, the farm benefits from ideal conditions for cultivating specialty coffee. Under the leadership of Nestor Lasso, El Diviso has gained international recognition for its scientific approach to coffee processing, commitment to sustainable production, and exceptional attention to quality. Through ongoing collaboration with agronomists, researchers, and coffee professionals, the farm continues to develop new processing methods and work with unique coffee varieties, showcasing the diversity and potential of Colombian specialty coffee.

Ripe coffee cherries are harvested, disinfected, and floated in water to remove impurities and less dense fruit, ensuring only fully ripe cherries are selected. The cherries undergo an oxidation stage for 36 hours. Then coffee cherries are depulped. The coffee undergoes 60 hours of anaerobic fermentation, followed by 12 hours of submerged fermentation using liquid collected from previous batches. The process is finalised by applying a thermal shock, washing the coffee with hot water at 65–70°C.


The coffee is dried using stainless steel dehumidifying equipment to control moisture loss, with temperatures kept below 38°C until the final moisture content reaches 10–11%.
