Marysabel grew up in the Honduran region Marcala and stems from a long generation of coffee producers, from which she has harnessed her passion for nature and knowledge of the Honduran terroir.
 
Moises is of Guatemalan origin. He worked as an accountant for a coffee exporter, however while spending his time at the cupping table he jumped wholeheartedly into specialty coffee. In the early 90’s, he was sent by his company as production manager to Honduras where he met Marysabel and was inspired to stay. In 1996 Moises and Marysabel married. Since then, they have two sons and run the farm as partners.

Every year, the family optimizes the processing methods at their mill in Chinacla, while paying great attention to environmental protection and sustainability. Among other things, Moises has set up a modern coffee eco-pulper to save as much water as possible. For instance, whereas de-pulping a 46 kg batch of coffee cherries would require 120 liters, he now uses 40 liters. The water is recirculated and cleaned after each use.

Moises has his own variety garden, which is affectionately called by Marysabel “Moises’ Garden of Eden”. Here he grows ancient, nearly forgotten coffee varieties in self-built greenhouses, does experiments and researches the effect and influence of temperature, water, wind, minerals and soil on his plants.

We're thrilled to have Moises and Marysabel's gesha lot land in our roastery. Expect notes of raspberry, cacao nibs and white grapes with a wonderful jasmin aroma.

Grown at 1,650–1,800 MASL across Nyeri and Embu counties, this SL28/SL34 varietal thrives in red volcanic soils, nurtured by a collective of passionate farmers from the Murware community.

The Supernatural process begins with hand-sorted, early-harvest cherries selected for their ripeness. Fermentation takes place in an airtight, cool environment, slowing the process to develop a funky and fruity flavour profile. Following this, the cherries are “burrito-wrapped” on raised beds for three days to amplify their Supernatural qualities before being spread thin to dry over 25–30 days. The result? A beautifully structured cup with juicy cranberry, floral hibiscus, and panela’s deep sweetness.

Between the volcanic peaks of Mount Sindoro and Mount Sumbing in Java lies the home of the Kojoyo cooperative and First Light Coffee. This collaboration has transformed the region’s coffee production, creating sustainable systems, introducing innovative practices like soil testing and organic fertiliser production, and delivering exceptional quality coffees.

This Sindoro lot, grown at an elevation of 1,600–1,800 MASL, highlights the potential of Arabica cultivars such as Kartika, Lini S, and Sigararutang. The Java Sindoro Natural Hydro process begins with the careful selection of only the ripest red cherries, fermented for six days using an Intenso yeast strain. After fermentation, the coffee undergoes a precise drying cycle: open-air drying for three days, dome drying for 14 days, resting for seven days, and additional dome drying for seven more days. The cherries are then hulled, hand-sorted, and rested for one month to ensure optimal quality.

This innovative processing method accentuates a vibrant fruit profile, delivering notes of crisp pink lady apples, syrupy candied figs, and the elegant depth of red wine. The structured, balanced finish makes this filter coffee a true standout, offering a fresh take on Indonesian coffee tradition. It’s a coffee that reflects the harmony and dedication of the Kojoyo cooperative while showcasing the diverse and complex flavours of Java.

From the heart of Matagalpa, Nicaragua, El Limoncillo is a testament to the craftsmanship of Finca Limoncillo, managed by Fausto Martinez. This coffee originates from 119 hectares of lush farmland nestled in Yasica Sur, surrounded by 54 hectares of protected rainforest. The farm’s dedication to sustainable practices and quality has earned them accolades, including 2nd place in the 2008 Cup of Excellence.

This Ethiosar varietal, grown at elevations between 975–1,230 MASL, undergoes a meticulous natural process to bring out its rich complexity. The cherries are sun-dried at peak ripeness, locking in vibrant flavours of dried dates, berry jam, and a hint of herbs. Nicaragua El Limoncillo offers a bold, syrupy espresso with deep notes of dried dates, rich dark chocolate, and a warming touch of nutmeg.

Origami Dripper - Pink

Cuatro Caminos' Loma de Los Cedros is an 7.2 hectare farm at an average altitude of 1.550 meters above sea level and has around 36.150 trees. Formerly known as Finca Damarli, named after the previous owner’s daughter, is a beautiful farm located near Volcancito.
 
The farm is situated in the shadow of the famous Volcan Baru volcano, the source of the rich volcanic soil that makes Boquete coffee so desirable. Added to the ample supply of water and natural shade, all the ingredients are there to make the coffee from Loma de Los Cedros some of the best in town.

Geisha from Cuatro Caminos' Loma de Los Cedros has become one of the most elegant and beautiful geisha profiles we have had so far, and in 2019, we started the replanting process with this in-demand varietal, planting it among old Catuai trees.

Our [Lost Origin Lab] journey of experimentation has been influenced by our knowledge in beer making. Hence, several of our batches were fermented using microbe strains commonly used in the beer industry. However, we had a compromise to step into the unknown. During our first processing season, we had the opportunity to work with Chr. Hansen, which is a global company dedicated to bioscience. Through this collaboration we were granted access to a few strains we had not had the chance to work with before, among which were L. thermotolerans and Pichia kluyveri.

L. thermotolerans is a yeast species that is commonly found in grapes, plants and soil. As such, it is extensively used in wine fermentations. In terms of beer production,  L. thermotolerans is a species whose popularity has been increasing in recent years as an alternative strain for the production of sour beer. However, it is still not considered to be the main strain for the production of sour beer styles, and is currently not used in our brewery facility.

Pichia kluyveri is a microorganism that has been widely studied due to its ability to produce high volatile compound concentration as a result of its metabolism. Similar to L. thermotolerans, it is a species that is widely used in wine making.

In order to assess the impact of microbe metabolism as an isolated variable, and get familiarized with these microbes, we designed a few trial series. The first trial was composed of three lots, all of which used geisha cherries harvested from Don Benjie’s estate. The purpose of this first experiment was to compare how the cup profile was altered through varying microbe metabolism. Perfect for the PM, Daterra's Low Caf Reserve is the ideal afternoon coffee. Daterra farms in Brazil have spent years cultivating unique varietals suited to their terroir and climate. We’re lucky enough to present a lot of their natural processed Aramosa varietal, a fruity and funky Brazilian coffee with a hidden benefit.

Aramosa is crossbred varietal of coffee that produces 50-70% less caffeine than typical Arabica varietals. So what? So what?! It means you can enjoy a great, interesting, delicate espresso or two, without worrying how late in the day it is. It means you can have twice as much coffee without altering your caffeine intake!

More important is this cups super rich flavour profile. Due to the natural processing, the lot has a fruitier profile than is typical from a Brazilian coffee. It retains the rich, caramel sweetness that Brazil is known for, but has clear notes of raspberry, with a grape-like aftertaste. Roasted for espresso, the texture is velvety and rich, and leaves you wanting more. Good thing it's Low-Caf!

The Bombora was actually our very first blend, and oh my, a lot happened since. No one within our company quite remembers it's date of creation, but let’s just say it got forged in fire and a spinning roaster drum almost a decade ago.

Our Bombora blend has been a house blend staple for café’s across Amsterdam and the world, including our very own. It was our first creation, designed as a strong morning workhorse coffee that was sweeter than the status quo.

The secret to its success is its balance of full hazelnut and chocolate tones, tempered with caramel sweetness and a dash of dark cherry. To create this sensory experience, we roast a blend Guatemalan and Brazilian beans, with maximum chocolate sweetness as the goal.

Try it with milk for a nutty chocolate latte, or as a sweet syrupy espresso for that dark cherry aftertaste.

We start with the highest quality coffee, filtered water and cold brew it for 18 hours in stainless steel tanks, then use a filtration process to procure the end result: a smooth and full-bodied brew with medium-acidity and a chocolate finish.

The two natural coffees work together to perform their duet, one holding down the body, the other hitting the high notes, all while being careful not to clash in the middle of the halfpipe. 

It’s sweet and fruity when served black, with a delicate balance of bright and smooth notes. With milk it transforms into a smooth chocolate strawberry milkshake.
